Classic French Dressing

Ingredients:

1 cup extra virgin olive oil
¼ cup red wine or balsamic vinegar
1-2 tsp Dijon mustard
1 clove garlic, minced, optional
Salt and pepper to taste

Directions:

  1. Combine all the ingredients in a jar with a lid (I like this one), close the lid and shake well to incorporate.
  2. Use immediately with Violets, Beets, and Pea Shoots Salad or Veggie Pasta.
  3. Store leftovers in the pantry for up to two-three weeks.
