This recipe is apart side dish, part sauce because the mushrooms are well cooked and so creamy! You can use any type of mushroom for this recipe.

Creamy Mushrooms

Ingredients:

1 lb of button mushrooms, or any other type
½ lb shiitake mushrooms
1 big onion, thinly sliced against the grain
2 Tbsp olive oil
½ cup creamy sauce or sour cream/crème fraîche (optional)
Salt to taste

Directions:
  1. In a heavy skillet or frying pan warm up the oil over medium heat, add the onion and sauté for 5-10 minutes, mixing regularly until golden brown. Be careful not to burn the onions.
  2. Meanwhile dice the mushrooms into medium pieces, about ½ inch. Then add them to the skillet and continue sautéing until the liquid most evaporates.
  3. Add the creamy sauce or sour cream, salt and mix well together. Cook for another 2-3 minutes and serve. For example, you can serve it with potato pancakes stuffed with meat the you see on the picture.
