This recipe is fun to make together with your kids and an excellent way to feed you little ones some green leafy vegetables at the same time! Health Benefits Of Kale

Kale and some other green leafy vegetables like mustard greens and collard greens are some of the healthiest vegetables you can add to your cooking repertoire. They belong to the broccoli (cruciferous) family and share many of the same health benefits. For instance, these vegetables are very high in folate, vitamin C, K and carotenes, iron and calcium. They contain important compounds that help protect and prevent cancer, support the health of the eyes, and play an important role in detoxification pathways in the liver.

Green Eggs And Ham

Ingredients:

2-3 eggs
2-3 kale leaves, stem removed
salt and pepper to taste
1 Tbsp olive oil or butter

Directions:
  1. Combine the eggs and kale leaves in a high power blender like Vitamix, add salt and pepper and blend together until smooth.
  2. Warm up the butter or oil in a frying pan, preferably with a ceramic non-stick surface, over medium heat. Pour the mixture into the pan and let cook for about a minute undisturbed.
  3. With the help of a spatula start scraping the egg mixture off the pan, just like you would do when making scrambled eggs. Cook for 2-3 minutes constantly scraping.
  4. Serve with a thin slice of Rosemary Pork Should
