I love making and eating soups! I have a whole list of great benefits and advantages of eating them:

  • You can make a lot of food at one time and it only gets more flavorful as it sits in the fridge for a couple of days. You can also freeze individual portions and eat them later with no loss in taste or nutritional quality.
  • It’s a great way to get your vegetable intake into yourself and your loved ones. Vegetables are the key component of any anti-inflammatory diet. I recommend eating 6-8 servings of vegetables a day. One serving is 1 cup of raw or ½ cup of cooked vegetables.
  • The technique I use to cook soups is also very healthful! Cooking vegetables in liquid and then consuming them with that liquid insures that the minerals and vitamins that escaped into the liquid are not escaping from us.
  • A lot of my soups are made with broths (chicken or beef). In addition to enhancing the flavor of the soup, broth brings in minerals and building materials for our connective tissue like joints, bones, elastin and collagen.
