Tangy Tomato Sauce

Ingredients:

2 Tbsp olive oil
1 shallot, minced
1 garlic clove, minced
2 tomatoes, peeled and cubed
1 tsp freshly squeezed lemon juice
2 Tbsp fresh basil, minced
Salt and pepper to taste

Directions:
  1. In a sauce pan over low heat warm up the oil and sauté the shallot and the garlic for 3-5 minutes.
  2. Add the tomato and cook for 5 minutes
  3. Add the lemon juice and basil. Adjust the seasoning and serve warm.
