Homemade Pineapple Mint popsicles are a perfect recipe to make with your kids. Let’s face it, the kids are going to want ice cream in the summer, especially with ice cream trucks playing their music up and down your streets. Well, instead of feeding them artificially flavored and chemically colored popsicles with loads of sugar and high fructose corn syrup, let’s make our own and have some fun with the kids at the same time! Delicious and full of fruit and vitamins!

Health Benefits Of Pineapple
- Pineapple contains an enzyme called bromelain that helps digest proteins. Papaya also contains powerful digestive enzyme: papain and chymopapain. So eating pineapple and papaya after dinner is a good way to assist your tummy!
- Extensive research also found bromelain effective in inhibiting platelet aggregation in the arteries and protecting cardiovascular health, in killing cancer cells, in combatting inflammation, and in reducing formation of nitrosamines (carcinogens related to processed and fried meats).
- To get the health benefits of pineapple it’s best to eat it fresh. Canned pineapple will not contain bromelain as the cooking involved in pasteurization destroys it.
- Bromelain will survive freezing but for limited periods only. So overall, it is better to use fresh pineapple.
Pineapple Mint Popsicles
Ingredients:
1 lb fresh or frozen pineapple
2 ripe bananas
½ papaya
½ cup loosely packed fresh mint leaves
2 Tbsp raw honey
Directions:
- Prepare popsicle molds. I use 2 ounce molds and the recipe makes 15 popsicles.
- Place mint leaves in a mug and pore boiling water over just to cover them, cover and let steep for 10-15 minutes. Strain and cool to the room temeperature. Dissolve honey in the liquid.
- In a power blender like Vitamix combine all the ingredients and add the mint-honey liquid. Blend until smooth.
- Pore the resulting fruit smoothie into the molds and freeze.
- Wait for at least 2-4 hours before serving. Enjoy!
