Chicken With Vegetables and Spices - Chakhokhbili

Ingredients:

2 Tbsp olive oil
3-4lb chicken parts with bones and skin
3-4 onions, chopped
3-4 tomatoes, chopped
2 red bell pepper, chopped
6 cloves garlic, minced
1 hot pepper, minced
1 tsp ground coriander
½ tsp ground fenugreek
1 bunch fresh cilantro, chopped
1 bunch fresh parsley, chopped
salt to taste

Directions:
  1. Warm up the oil in a thick skillet or pot, place the chicken in, salt, cover with a lid and simmer for about 20 minutes.
  2. While the chicken is cooking, chop up the vegetables. Add them to the pot and keep simmering until the chicken is very soft and separating from the bones, about 30 minutes.
  3. When the chicken is done add the ground spices, minced garlic and herbs, adjust the seasoning and turn off the stove.
  4. Let the spices infuse for about 10 minutes then serve with Lobio a bean salad from the same region.
