Creamy Mushrooms - Delicious Food and Medicine!

Mushrooms have been used for food and medicine for thousands of years. There are many ways to enjoy them. For example, you can eat some of them raw, you can lightly cook them on very high heat. You can also stuff them and bake them in the oven. This recipe is a part side dish, part sauce because the mushrooms are well-cooked and so creamy! You can use any type of mushroom for this recipe.

In addition to their high fiber, high protein, and low-calorie qualities, mushrooms offer a variety of health benefits.

  • They are a good source of selenium – a powerful antioxidant and a cofactor for many vital enzymes. For example, selenium contributes to the synthesis of the thyroid hormone.
  • They are also one of the very few plant sources of vitamin D.
  • Research shows that shiitake mushrooms are a superfood for our immune system because they nourish our white blood cells! They have antiviral, anti-tumor, and anticancer effects and help protect the liver and heart.

Creamy Mushrooms

Ingredients:

1 lb of button mushrooms, or any other type
½ lb shiitake mushrooms
1 big onion, thinly sliced
2 Tbsp olive oil
½ cup creamy sauce, sour cream, or crème fraîche (optional)
Salt to taste

Directions:
  1. In a heavy skillet or frying pan, warm the oil over medium heat, add the onion and sauté for 5-10 minutes, and mix regularly until golden brown. Be careful not to burn the onions.
  2. Meanwhile, dice the mushrooms into medium pieces, about ½ inch. Then, add them to the skillet and continue sautéing until the liquid mostly evaporates.
  3. Add the creamy sauce or sour cream and salt and mix well together. Cook for another 2-3 minutes and serve with boiled potatoes or buckwheat. You can also serve the mushrooms with potato pancakes stuffed with meat, as you see in the picture.
