Health Benefits Of Olive Oil

Olive oil is one of the most stable plant oils loosing out only to coconut and palm oils. By stable I mean that it doesn’t get rancid easily. And that’s because nearly three quarters of olive oil are monounsaturated fatty acids. It also contains high amounts of vitamin E, a powerful antioxidant that protects the oil. Olive oil improves blood lipid composition or the LDL/HDL ratio by decreasing LDL and increasing HDL.

I always encourage my clients to use cold press unrefined olive oil, especially in salad dressings. First of all, cold extraction method uses the lowest heat (80-90F) that doesn’t destroy heat sensitive compounds. Second, unrefined oil means only mechanical filtering was used. And no additional refining tricks like chemical bleaching or deodorization were performed. Due to this type of processing oil comes out rich in flavor, color and nutrients that are true to the olives. It’s best to eat this kind of oil raw like in this classic French dressing.

Classic French Dressing


1 cup extra virgin olive oil
¼ cup red wine or balsamic vinegar
1 tsp Dijon mustard
1 clove garlic, minced, optional
Salt and pepper to taste

  1. Combine all the ingredients in a jar with a lid (I really like this one), close the lid and shake well to incorporate.
  2. Use immediately with Violets, Beets and Pea Shoots Salad, or Veggie Pasta.
  3. Store left overs in the pantry for up to two-three weeks.
